Zesty Nori Cauliflower Pops

These crunchy cauliflower pops are inspired by the “fifth taste” known as umami, creating a deep, savoury, long lasting mouthful. Basically known as, the essence of deliciousness.

ingredients

1 medium cauliflower (makes roughly 4 cups of florets)
2 tbsp olive oil

Batter

1 cup coconut milk
¼ cup almond meal
The zest from 1 lime
Sprinkle of cayenne pepper, to taste (optional)

Crumb

2 cups panko crumbs
1 nori sheet, finely chopped
2 tbsp onion powder
1 tbsp garlic powder
1 tbsp salt flakes
1 tbsp black sesame seeds

Miso Ginger Dipping Sauce
⅓ cup white miso paste
⅓ cup warm water
⅓ cup sesame oil
1 tbsp soy sauce
1 heaped tbsp coconut sugar
1 heaped tsp ground ginger
1 tsp chilli flakes
1 tsp garlic powder
1 tsp sesame seeds (toppings)

method

1. Start by preheating the oven to 180 degrees celcius/ 350 degrees fahrenheit and line a baking tray with baking paper.

2. In a large bowl combine the wet batter ingredients (1 cup coconut milk, ¼ cup almond meal, and the zest from 1 lime), mix well. In a second large bowl combine the crumb ingredients (2 cups panko crumbs, 1 nori sheet, finely chopped, 2 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp salt flakes and 1 tbsp black sesame seeds.

3. Chop 1 medium cauliflower into bite-sized pieces. You should get around 16 florets. Dip one piece into the wet batter, covering it completely, then drop it into the crumb bowl. Make sure it is firmly patted in crumbs and place it on the baking tray. Repeat for each cauliflower piece.

4. Drizzle 2 tbsp of olive oil over the cauliflower pieces. Place cauliflower pops in the oven for 25 minutes, or until crispy and golden brown!

5. While the cauliflower is cooking, prepare the dipping sauce. Add ⅓ cup white miso paste, ⅓ cup warm water, ⅓ cup sesame oil, 2 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 heaped tbsp coconut sugar, 1 heaped tsp ground ginger, 1 tsp chilli flakes and 1 tsp garlic powder to a blender. Blend until smooth. Top with 1 tsp sesame seeds. Serve dipping sauce with cauliflower pops for the ultimate umami taste combination!

*tips – if you like the spicier things in life then sprinkle cayenne pepper in with the batter ingredients (sprinkle to your desired taste!)
– by firmly ‘patting’ the cauliflower floret in crumbing you are ensuring the batter sticks to the crumb and then it won’t easily flake off once cooked!
