Wholesome Harvest Vegan Sausage Rolls

Get into the festive spirit with these savoury Lentil & Veg Sausage Rolls! Packed with wholesome ingredients and bursting with flavour, they’re the perfect addition to your holiday spread.

ingredients

1 tbsp olive oil
1 brown onion, finely diced
3 garlic cloves, minced
300g/10.5oz mushrooms, sliced
150g/5.3oz carrot, finely diced
100g/3.5oz green beans, finely chopped
1 cup lentils
1 cup passata sauce
½ cup breadcrumbs
Salt & pepper, to taste
1 tsp paprika
½ cup nutritional yeast
¼ cup fresh thyme
3 puff pastry sheets
1 tbsp butter, melted
1 tbsp mixed seeds
1 tbsp sesame seeds

method

1. Preheat the oven to 200 degrees celcius/ 390 degrees fahrenheit and line a baking tray with baking paper.

2. In a large frying pan, add 1 tbsp olive oil, 1 finely diced brown onion and 3 minced garlic cloves. Saute until the onion becomes translucent. Add 300g/10.5oz sliced mushrooms, 150g/5.3oz diced carrot and 100g/3.5oz green beans, saute for another 3 minutes, or until the vegetables begin to soften.

3. Add 1 cup lentils, 1 cup passata sauce, ½ cup breadcrumbs, salt & pepper, 1 tsp paprika, ½ cup nutritional yeast and ¼ cup fresh thyme. Stir through for 4 minutes. Remove from heat.

4. Lay out 3 puff pastry sheets and divide the mixture between them. Lay the mix out horizontally, taking up one third of the pastry square (so you have room to roll it!)

5. Starting from the bottom, gently but firmly roll the pastry up and over the mixture, creating a log. Repeat for each pastry sheet.

6. Over the top of each sausage roll, spoon over 1 tbsp of melted butter and sprinkle with 1 tbsp mixed seeds and 1 tbsp sesame seeds.

7. Cut each roll vertically into 5 rolls and place them on the baking tray. Bake in the oven for 20-25 minutes, or until golden brown.

8. Keep refrigerated in an airtight container.
