Tropical Summer Smoothie Bowl
ingredients
1 frozen banana
1 cup diced frozen mango
½ lime, juiced
1 tbsp shredded coconut
1 tsp vanilla essence
½ cup almond milk (you could also use soy, coconut or oat milk)
method
1. In a high-speed blender put 1 frozen banana (make sure it’s cut in half, or into smaller chunks, so it blends easily), 1 cup frozen diced mango, juice of ½ lime, 1 tbsp shredded coconut, 1 tsp vanilla essence and ½ cup almond milk.
2. Blend the mix until it is smooth and creamy. It helps here if you use the blender stick to move the mixture around when it gets stuck. *you will use much less liquid than a smoothie, we want the consistency to be thick enough to spoon out (like ice-cream!).
3. Spoon the mixture out into a bowl and add your favourite toppings! We added kiwI fruit, orange slices, diced apple, shredded coconut and pepitas.
