Skip the tricky process of rolling sushi and enjoy these fuss-free sushi cups instead! Whether you’re preparing for a dinner party, doing your meal prep, or just looking for something different to snack on, these are so delicious you won’t be able to stop at one!
Sushi Cups
ingredients
Teriyaki Tofu
250g/8.8oz firm tofu, diced
¼ cup soy sauce
¼ cup water
1 tsp brown sugar
1 tsp garlic powder
1 tsp ginger

3 sheets sushi paper
2 & ½ cups cooked sushi rice
100g/3.5oz cucumber, finely diced
½ red onion, finely diced
⅓ cup pickled ginger
4 tbsp kewpie mayonnaise
4 tbsp spring onion, sliced
1 tbsp sesame seeds
method
1. Preheat the oven to 180 degrees celcius /350 degrees fahrenheit.
2. In a small mixing bowl combine 250g/8.8oz firm diced tofu, ¼ cup soy sauce, ¼ cup water, 1 tsp brown sugar, 1 tsp garlic powder and 1 tsp ginger. Mix together until all of the tofu is marinated and set aside.
3. Cut all 3 sheets of sushi paper into 4 equal square sized pieces.
4. Using a 12-cup muffin tray, place a square of sushi paper over each cup and scoop approximately 2 heaped tbsp of cooked sushi rice into each cup. Press the rice down firmly into the cup, making a small indent for the other ingredients.
5. Spoon the tofu into the cups, distributing evenly amongst all 12. Place in the oven and bake for 10 minutes.
6. Remove from the oven and add the remaining toppings evenly amongst the cups. Start with 100g/3.5oz diced cucumber, ½ diced red onion and ⅓ cup pickled ginger. Then squeeze kewpie mayonnaise over the top, followed by a sprinkle of 4 tbsp of spring onion and 1 tbsp sesame seeds.
*Tips – cook the sushi rice the night before so it has time to completely cool down and have a sticky texture.
You can also mix the teriyaki tofu together in a ziplock bag, rather than a bowl. This method helps to distribute the sauce evenly throughout the tofu, covering more.
