Scrambled Tofu

This scramble has us wondering why we’ve never mashed our tofu before! Just lightly toast the scramble through with the spices and add any extra vegetables you like.

ingredients

1 block (450g/16oz) firm tofu
1 tbsp extra virgin olive oil
1 tbsp vegeta stock
1 tsp cumin
1 tsp paprika
½ cup shallots, sliced
1 sprig bunch (10g/0.5oz) fresh dill, roughly chopped

Optional extras

1 fresh chilli, sliced
2 slices rye toast (per serve)

method

1. Place the 450g block of tofu on a plate and use a fork to mash it down. Do this until there are no large chunks. Transfer into a frypan with 1 tbsp of extra virgin olive oil.

2. Add 1 tbsp vegeta stock, 1 tsp cumin, 1 tsp paprika and stir through. Cook on a medium heat for 5 minutes, occasionally stirring the mixture. Remove from heat.

3. Prepare the toast and spread scrambled tofu out on top. Garnish with a sprinkle of sliced shallots and a pinch of roughly chopped fresh dill.

Tofu is a great source of protein as it contains all essential amino acids. Tofu also contains calcium, which we know strengthens teeth and bones, but it also helps our muscles and heart function! All of these benefits make this recipe a quick and simple way to help with the growth, repair and maintenance of our body’s tissues. Ideal for breakfast before or after your morning workout!
