Rustic Roasted Tomato Garlic Soup

Turn on the oven and get cosy, this soup is packed with immune-boosting nutrients and will warm you up from the inside out!

ingredients

12 ripe tomatoes
Garlic bulb (approx. 8 garlic cloves in total)
1 brown onion, cut into quarters
Drizzle of olive oil (approx. 2 tbsp)
1 tsp salt
1 tsp pepper
5 sprigs of thyme
¾ cup liquid vegetable stock
100g/ 3.5oz silken tofu
½ cup coconut cream & extra for drizzling on top
Sprinkle of thyme & basil leaves

Optional – toasted bread as a side!

method

1. Preheat the oven to 180 degrees celsius or 355 degrees farenheit.

2. In a large baking dish add 12 ripe tomatoes, a whole garlic bulb (remove the flakey skin first) and 1 brown onion (cut into quarters). Make sure everything fits in one layer, as you want it to roast evenly.

3. Drizzle over approximately 2 tbsp worth of olive oil and sprinkle with 1 tsp salt and 1 tsp pepper. Add 5 sprigs of thyme.

4. Place in the oven and roast for 30-40 minutes.

5. Remove and allow to cool slightly before removing any stems from the tomatoes and removing the thyme.

6. Add the rest into a blender or large saucepan. When adding the garlic bulb, make sure to squeeze out the garlic cloves, they should pop out effortlessly.

7. Add ¾ cup liquid vegetable stock, 100g/ 3.5oz silken tofu and ½ cup coconut cream. Blend in the blender, or if you don’t have one, use a stick blender in the saucepan. Blend until it reaches your desired smoothness!

8. Heat the soup up in a large saucepan before serving. Add a drizzle of coconut cream and a sprinkle of thyme and basil leaves to the top! Serve with crunchy bread and butter.

Tips
Make sure your tomatoes are ripe and rich in colour! This will improve the quality and taste of your soup.
Remove the excess flakey skin of the garlic bulb and add it to the dish whole, as this creates a more intense flavour!
If using a blender you may need to divide the tomatoes into two batches so they fit.
Add more salt and pepper at the end, to your liking
