Make cauliflower a regular in your week with this delicious recipe that is the perfect vege side to your main dish.
Roast Cauliflower Mix
ingredients
1 cauliflower
3 carrots
2 tbsp olive oil
Salt and pepper, to taste
1/2 tsp cumin
3 fresh thyme stalks
method
1. Preheat the oven to 200 degrees celcius/390 degrees fahrenheit and line a baking tray with baking paper.
2. Roughly chop 1 head of cauliflower. Start by removing all of the stalk, then cut the florets into even bite-sized pieces. Remove the top of 3 carrots, then slice them evenly.
3. Place cauliflower and carrots into a pot. Add oil, cumin, salt and pepper, then cover with lid. Hold pot and lid tight as you shake to combine and cover veg with oil and spices.
4. Add pieces into the baking tray, place thyme on top and bake in the oven for 20-30 minutes until tender and golden.
