Protein Pudding

Increase your protein intake for the day and enjoy a sweet treat at the same time! This velvety-smooth chocolate pudding is a quick and easy way to help your muscles recover after a big training day.

ingredients

300g/10.5oz silken tofu
2 heaped tbsp cacao powder
2 scoops (or 4 tbsp) of plant protein powder
2 tbsp cornflour
3 tbsp maple syrup
2 tbsp oat milk

Toppings
½ banana, sliced
8 fresh raspberries

method

1. In a blender add 300g/10.5oz silken tofu, 2 heaped tbsp cacao powder, 2 scoops (or 4 tbsp) of plant protein powder, 2 tbsp cornflour, 3 tbsp maple syrup and 2 tbsp oat milk.

2. Blend until thick and creamy, then divide mixture into 2 cups, jars or tupperware containers. Refrigerate for at least 1 hour.

3. Remove from the fridge when you’re ready to eat, adding ¼ banana (sliced) and 4 fresh raspberries on top of one pudding!

When you consume enough protein in your diet you provide your body with the nutrients and fuel it needs to repair those muscles, help them grow and maintain their efficiency. The tofu in this recipe also contains calcium, which is mainly known for strengthening teeth and bones, but also helps our muscles and heart continue functioning at a healthy rate!
