Protein-Packed Chickpea Bliss Burgers
ingredients
Chick Patty
1 can (400g/14oz) chickpeas
½ cup water
1 tbsp chicken salt
1 cup chickpea flour
1 & ½ cup all-purpose flour (½ cup for pattie, 1 cup for crumb coating)
1 cup breadcrumbs
Sweet Onion Relish
1 brown onion
1 tbsp extra virgin olive oil
¼ cup maple syrup
Spicy Slaw
¼ red cabbage
¼ white cabbage
1 carrot, grated
1 cup sriracha mayonnaise

4 brioche buns
4 large lettuce leaves
4 slices vegan cheese
method
1. Start by preheating the oven to 180 degrees celcius / 350 degrees fahrenheit and begin making chick patties by adding 1 can of chickpeas (drained), ½ cup water and 1 tbsp chicken salt into a high-speed blender or food processor. Blend until chickpeas are broken down into a paste. Spoon mixture into a bowl.
2. Add 1 cup chickpea flour and ½ cup all-purpose flour to the chickpea blend and mix together. Use your hands to knead the dough together until it forms a ball. Separate into 4 portions, and flatten them until they form a chicken patty shape.
3. Bring a large saucepan of water to boil, and gently drop patties in and cook for 3-4 minutes.
4. Mix together 1 cup all purpose flour and ½ cup water to create a paste. Remove the patties from the water, using tongs, and drop into the bowl of flour paste, covering each side. Then, transfer patties to a plate with 1 cup of breadcrumbs and coat evenly on all sides. Place crumbed patties on a baking tray and cook for 30 minutes.
5. While the patties are cooking, prepare the sweet onion relish and spicy slaw. Cut 1 brown onion into slices and add to a frypan with 1 tbsp of olive oil, cook on a medium heat for 3 minutes. Add ¼ cup maple syrup, stir through and lower heat again.
Continue stirring the onions occasionally for 10 minutes until they are caramelized and thick. Then remove from heat.
6. Slice ¼ of a red cabbage and ¼ of a white cabbage, into thin strips. Grate 1 carrot. In a mixing bowl combine the cabbage and carrot with 1 cup of sriracha mayonnaise. Set aside.
7. Once the chick patties are cooked, begin putting the burgers together! Cut open a brioche bun, add 1 tbsp of sweet onion relish to the bottom bun, lay down 1 lettuce leaf, add the chick patty on top, place 1 slice of vegan cheese on top and finish with 2 tbsp of spicy slaw! Repeat for all burgers and serve.
