This bread loaf is packed with protein and nutrients, making it a great snack, or lather on some delicious jam or nut butter for a more filling meal!
Protein Fruit & Nut Bread
ingredients
80g/2.8oz walnuts, roughly chopped
120g/4.2oz almonds, roughly chopped
2 cups (250g/8.8oz) dried fruit (we used dried apricot, dried cranberries & medjool dates)
2 cups all purpose flour
2 tsp baking powder
Pinch of salt
2 tbsp coconut sugar
¼ cup orange juice
¾ cup water
¼ cup olive oil
3 tbsp plant-based protein powder
2 cups mixed seeds (we used sunflower, pepitas, buckinis & hemp seeds) 1 cup for bread mix & 1 cup for toppings
¼ cup raspberries
method
1. Preheat the oven to 180 degrees celcius/ 356 degrees fahrenheit. Line a loaf tray with baking paper, or lightly spray it with oil.
2. Roughly chop up all of your nuts and dried fruit, making sure they aren’t too large and chunky.
3. In a large mixing bowl combine 80g/2.8oz walnuts, 120g/4.2oz almonds, 2 cups (250g/8.8oz) dried fruit, 2 cups all purpose flour, 2 tsp baking powder, pinch of salt, 2 tbsp coconut sugar, ¼ cup orange juice, ¾ cup water, ¼ cup olive oil, 3 tbsp plant-based protein powder and 1 cup of mixed seeds. Combine well until the mixture starts to become sticky.
4. Transfer mixture to the loaf tray and smooth it down. Add ¼ cup raspberries to the top.
5. Sprinkle 1 cup (the leftover) of seeds on top of the bread mix. Bake in the oven for 45-55 minutes. At the 45 minute mark, insert a knife or toothpick into the bread, if it comes out clean then it’s ready, if not, continue to bake for 10 minutes.
6. Allow to cool before slicing!
