Moroccan Spiced Butter Beans

This recipe has become a staple snack in my weeks. Inspired by the spices of Morocco, these quick and easy butter beans are full of flavour and protein, making it a great post-workout snack.

ingredients

1 can butter beans (400g/14oz)
1 tsp ground cumin
½ tsp smoked paprika (substitute for cayenne pepper if you prefer more heat)
½ tsp cinnamon
½ tsp ground ginger
Salt and pepper, to taste

method

1. Drain 1 can of butter beans and rinse well. Place in a frypan, set to a medium simmer. *nonstick pan

2. Mix through 1 tsp ground cumin, ½ tsp smoked paprika, ½ tsp cinnamon, ½ tsp ground ginger and salt and pepper, to taste.

3. Cook for 5 – 6 minutes until golden brown and slightly blistered, stirring occasionally.
