Jackfruit Sliders w Vegan Slaw

You weren’t the only one who was skeptical about an exotic, unknown fruit dressing up as pulled pork, but wow, this is one alternative that is here to stay!

ingredients

Pulled Jackfruit

1 can jackfruit, drained (230g/8.1oz)
1 tbsp olive oil
½ brown onion, diced
1 tsp cumin
1 tsp smoked paprika
1 tsp apple cider vinegar
4 tbsp barbeque sauce *smokey barbeque also works well
1 cup water
4 slider buns (brioche)
2 cups coleslaw (store bought or home made recipe below)

Home-made Slaw

¼ red cabbage
¼ white cabbage
2 carrots, grated

Dressing
¾ cup vegan mayonnaise (see sides/dressings for recipe)
1 tbsp dijon mustard
1 tbsp soy milk
1 tsp maple syrup
½ lemon, juiced

Vegan Mayonnaise

¾ cup sunflower oil
½ cup soy milk
1 tbsp apple cider vinegar
1 tsp salt

*Add all ingredients into a high speed blender and blend until smooth and creamy. If you don’t have a blender you can also whisk the ingredients together. Keep refrigerated in an airtight container.

method

1. Begin by preparing the coleslaw and refrigerate when done.

2. In a pan, on a medium heat, add the olive oil and onion, and stir until the onion softens.

3. Add jackfruit chunks, cumin, smoked paprika, apple cider vinegar, barbeque sauce and water and mix through. Leave on heat for 10 minutes, stirring occasionally, until the sauce begins to thicken.

4. Once the mixture is thick and the jackfruit begins to fall apart easily, remove from the pan and transfer to a bowl. With two forks, pull apart the jackfruit so it becomes shredded.

5. Cut the slider buns open and add approximately 2 tbsp of shredded jackfruit and 2 tbsp of coleslaw, place the tops on and serve!

Home-made Slaw
1. Cut your cabbage into quarters. Cut out the core, and thinly slice vertically, then slice once horizontally to create small strips. Place into a large mixing bowl and add grated carrots.

2. In a smaller bowl, whisk dressing ingredients until well combined.

3. Pour the dressing over vegetables and mix through. Refrigerate for 1 hour, to soak the flavour in.
