Superfruit Crumble w Vegan Custard

Cold nights call for warm desserts and this recipe is so simple and packed full of super foods you’ll be dishing it out every week!

ingredients

2 apples
2 pears
50g/1.8oz coconut sugar
1 tsp cinnamon
1 tsp nutmeg
2 tbsp lemon juice
1 tbsp all purpose flour
30g/1oz sultanas *goji berries, or cranberries will also work
¼ cup coconut oil
2 cups rolled oats
¼ cup pumpkin seeds
1 cup crushed walnuts

Vanilla Tofu Custard:
300g/10.5oz silken tofu
1 tbsp vanilla extract
¼ cup maple syrup
¼ cup coconut cream
pinch of salt

method

1. Preheat the oven to 200 degrees celcius/400 degrees fahrenheit.

2. Cut 2 apples and 2 pears into 3cm cube chunks. Place into a saucepan, on a medium heat.

3. Add 50g coconut sugar, 1 tsp cinnamon, 1 tsp nutmeg, 2 tbsp lemon juice, 1 tbsp all purpose flour and 30g sultanas. Stir through, then add the lid and cook for 5 minutes, or until the fruit has softened. Remove from heat.

4. Meanwhile, melt ¼ cup coconut oil and add to a mixing bowl with 2 cups rolled oats, ¼ cup pumpkin seeds and 1 cup crushed walnuts. Mix together until all ingredients are wet.

5. Transfer fruit mixture into a baking dish or skillet and spread crumble over the top. Bake in the oven for 25 to 30 minutes, until golden.

6. Whilst crumble is cooking, prepare the custard. In a blender add 300g silken tofu, 1 tbsp vanilla extract, ¼ cup maple syrup, ¼ cup coconut cream and a pinch of salt. Blend until smooth. Transfer into a custard pourer. Serve with crumble!

Apples and pears contain great antioxidant profiles, helping to fight any damage to our skin whilst also improving its regeneration process. Then, once the healthy fats have been distributed, they go to work maintaining the elasticity of skin. This shows how important it is to concentrate on the health and beauty of our skin from the inside-out, rather than the outside-in!

The delicious crunchy crumble also provides a great dose of fibre from the rolled oats. Oats are one of the richest sources of fibre, particularly beta-glucan, a soluble fibre that studies have shown helps lower cholesterol reabsorption in our bodies.
