Easy Vegan French Toast

If you’re looking to hit that sweet spot for brunch, look no further. This french toast recipe will curb your cravings and provide a good amount of protein as well (thanks to our secret ingredient!)

ingredients

4 slices of bread
100g/3.5oz firm tofu, roughly diced
1 cup oat milk (any plant milk will work)
2 tsp coconut sugar
½ tsp cinnamon
½ tsp vanilla extract

Optional toppings:
1 tbsp rice malt syrup (or maple syrup/honey)
1 dollop of coconut yoghurt
½ cup blueberries/strawberries
*you could add any fruit, nuts or seeds your desire!

method

1. Place 100g of roughly diced tofu, 1 cup oat milk, 2 tsp coconut sugar, ½ tsp cinnamon and ½ tsp vanilla extract into a high-speed blender. Blend until smooth, ensuring the tofu is no longer chunky! Pour batter into a dish (one that you can easily dip bread into).

2. Soak one side of your bread in the batter, for approximately 30 seconds, then flip over and soak the other side. Remove from batter and transfer to a frying pan or skillet.

3. Cook the slice of bread on each side until it becomes golden. Transfer to a serving plate. Continue with all 4 pieces of bread.

4. Layer toast on top of one another and add toppings!

Tofu and french toast aren’t a common combo, however, it certainly provides a punch of protein for your next weekend brunch! 50g of tofu (found in one serving of this toast) gives roughly 8g of protein, compared to one large egg, in a typical french toast recipe, gives roughly 6g!
