Amanda’s Chia Oat Pancakes

Amanda’s weekend favourite, this simple, tasty and nutritious breakfast only has 4 easy steps….blend, pour, flip, eat!

ingredients

1 large ripe banana
1 cup (80g/2.8oz) rolled oats
1 cup (240g/8.6oz) coconut milk
3 tbsp hemp seeds
2 tbsp chia seeds
1 tsp vanilla essence

Optional toppings:
1 cup (150g/5.3oz) strawberries, halved
½ cup (55g/2oz) blueberries
1 tbsp rice malt syrup

method

1. Put 1 large ripe banana, 1 cup rolled oats, 1 cup coconut milk, 3 tbsp hemp seeds, 2 tbsp chia seeds and 1 tsp vanilla essence into a blender. Blend until it reaches a smooth consistency. Depending on your blender you may need to add a bit of water to the mixture (roughly ⅓ cup will do) to make the batter less thick.

2. Spoon the mixture out onto a non-stick frypan in circular shapes, and set to a low simmer. Flip the pancakes once the edges begin to golden (approximately 3 minutes on each side).

3.Serve with any fruit, nuts, seeds and sweeteners you desire! Amanda loves her pancakes with berries!
