Indulge in the sweetness of the season with this irresistible date slice! Featuring thick medjool dates, peanut butter, and a crunch from cornflakes, all coated with a drizzle of white chocolate and Christmas sprinkles!
Dream Dates for Christmas
ingredients
15 medjool dates
1 tbsp coconut oil
4 tbsp peanut butter
½ cup cornflakes
180g / 6oz dairy free white chocolate
¼ cup sprinkles
method
1. Put a sheet of baking paper over a baking tray. Remove the seeds from 15 medjool dates.
2. Open up the dates and lay them out, flat, onto the tray. Flatten them down so they overlap onto each other, creating the first layer.
3. In a small bowl, mix together 1 tbsp melted coconut oil, 4 tbsp peanut butter and ½ cup cornflakes.
4. Spread mixture evenly over the top of the layer of dates. Spoon it down flat.
5. Melt 180g / 6oz of white chocolate. Drizzle it over the top.
6. Sprinkle with ¼ cup sprinkles.
7. Place in the freezer for 1 hour, until it is firm.
8. Remove from the freezer and cut into pieces. Keep refrigerated.
