Crispy Homemade Slaw

We’re making cabbage the star for once! Coated in a delicious, creamy dressing, it pairs well with most of your favourite plant-based proteins.

ingredients

The Slaw
¼ red cabbage
¼ white cabbage
2 carrots, grated
A few sprigs of Dill

Dressing
300g silken tofu
¾ cup mild extra virgin olive oil
1 tbsp apple cider vinegar (or rice wine vinegar)
1 tbsp dijon mustard
1 tsp maple syrup
1 tsp salt
1 lemon, juiced

method

1. Cut your cabbage into quarters. Cut out the core, and thinly slice vertically, then slice once horizontally to create small strips. Place into a large mixing bowl and add grated carrots. Pull apart the dill into tiny little sprigs, enough to lightly coat throughout the slaw.

2. Blend dressing ingredients until well combined.

3. Pour the dressing over vegetables, and mix through.
