A creamy vanilla rice base with fruit, seeds and a passionfruit maple drizzle makes this a poke bowl with a sweet twist.
Creamy Vanilla Breakfast Poke Bowl
ingredients
½ cup basmati rice
1 cup oat milk
½ cup water
2 tsp vanilla extract
½ cup fresh mint leaves
½ apple, spiralised or grated
½ cup pineapple, sliced or diced
2 strawberries, sliced
1 tbsp blueberries
1 tbsp goji berries
1 tbsp pumpkin seeds
1 tsp chia seeds
1 passionfruit
1 tbsp maple syrup
method
1. Start by mixing ½ cup basmati rice, 1 cup oat milk, ½ cup of water and 2 tsp vanilla extract in a saucepan. Bring to a boil and then simmer for 15 minutes, until all the liquid is absorbed.
2. Once the rice is cooked, add it as the base of your bowl. Then layer ½ cup fresh mint leaves, ½ spiralised apple, ½ cup sliced pineapple, 2 sliced strawberries, 1 tbsp blueberries, 1 tbsp goji berries, 1 tbsp pumpkin seeds and 1 tsp chia seeds.
3. In a small bowl pour the contents of 1 passionfruit out and mix with 1 tbsp of maple syrup. Drizzle this over the poke bowl!

This poke bowl brings nutrients in from the variety of fruits and seeds it has. The apple contains pectin, a type of fibre that feeds the good bacteria in your gut, maintaining a healthy digestive system by outweighing bad bacteria. We often build up bad bacteria through poor diet choices, stress or from the environment we live in. Our bodies will never be completely without bad bacteria, but by choosing gut-positive foods we can balance them out! The pumpkin and chia seeds are a good protein source and work to build our cells, repair tissue, form antibodies and carry oxygen. These processes are all important when it comes to recovery as the extra oxygen and restoration rebuilds our muscles after training.
