Coconut Yoghurt Bark

A recipe so fun that the whole family will want to get involved! Just add your favourite toppings, freeze, wait and then break!

ingredients

Base:
2 cups coconut yoghurt

Fruit & Granola Breakfast Bark Toppings:
4 strawberries, sliced
2 tbsp blueberries
2 tbsp raspberries
¼ cup granola
2 tbsp pumpkin seeds

Other Optional Toppings:
Nuts (pistachios, crushed walnuts, sliced almonds, cashews)
Sweets (dark chocolate, chopped dates)
Goji berries, sultanas, cranberries

method

1. Lay baking paper down on a baking tray and spoon 2 cups of coconut yoghurt down. Spread the yoghurt out evenly, using half the tray.

2. Add your toppings evenly over the top of the yoghurt.

3. Freeze for at least 1 hour, or until the yoghurt bark is solid.

4. Remove and cut up into 4 pieces, or break them apart into shards. Eat immediately, otherwise it will defrost!
