Warm, soft, fluffy and dripping with a delightful vanilla glaze, these vegan scrolls are what dreams are made of.
Cinnamon Scrolls
ingredients
Dough:
1 packet dry active yeast
1 tbsp coconut sugar
¼ cup warm water
6 tbsp dairy free butter (I used nuttelex)
1 & ¼ cup soy milk
3 & ½ cups all purpose flour (leave ¼ cup for after dough has risen)
½ tsp salt
Cinnamon Filling:
3 tbsp dairy-free butter
1 tbsp cinnamon
¼ cup coconut sugar
Vanilla Glaze:
¾ cup powdered white sugar
2 tbsp melted dairy free butter
2 tsp vanilla essence
4 tbsp soy milk
method
1. In a small mixing bowl put 1 packet of dry active yeast with 1 tbsp of coconut sugar. Slowly pour in ¼ cup of warm water, mixing it through at the same time. Set aside for 10 minutes, so the yeast can activate. *make sure it’s warm water, not hot, as this will kill the yeast. You should notice it puff up after 10 minutes.
2. In a saucepan, on a low heat, melt 6 tbsp of dairy free butter with 1 & ¼ cups of soy milk. Stir continuously until the butter has melted and set aside until cool.
3. In a large mixing bowl combine 3 & ½ cups of all purpose flour with ½ tsp pink salt. Pour the melted butter from the saucepan into the yeast bowl. *Make sure the butter is warm, not boiling hot as this will kill the yeast. Then, combine those wet ingredients into the large mixing bowl of flour and fold through with your hands. Knead the dough for 5 minutes, then place the dough into a clean bowl and cover with gladwrap. Set aside for 60 minutes to rise.
4. Preheat the oven to 180 degrees celcius/350 degree fahrenheit. Once the dough has risen (*it should have doubled in size) add ¼ cup of flour, mix through and using a rolling pin, roll the dough out into a large rectangle shape. Cut the sides so it is straight.
5. Melt 3 tbsp of dairy free butter and brush or drizzle across the sheet of dough. Sprinkle over 1 tbsp of cinnamon and ⅓ cup of coconut sugar.
6.Starting from the longest side of the rectangle, roll the pastry up into a cylinder shape. Cut across the cylinder shape, to make the scrolls. Cut approximately 8cm/3inch wide. You should get 6 scrolls. Place in a circular baking dish (like a cake tin) and bake in the oven for 20 minutes.
7. To make the vanilla glaze add ¾ cup powdered white sugar, 2 tbsp melted dairy free butter, 2 tsp vanilla essence and 4 tbsp soy milk into a blender. Blend for 30 seconds and pour out into a bowl. Once scrolls are done, pour glaze over the top!

When this stress occurs over a long period of time it will cause inflammation that can result in a number of diseases. Aside from reducing your risk of disease and illness, research has shown that consuming a diet rich in antioxidants can slow the aging process, improve the health of your skin and hair and increase recovery efforts after exercise. Intense training results in oxidative stress, which isn’t a bad thing, as long as we offset this with antioxidants, as they help repair the tissue damage after exercise. So, no need to feel guilty for treating yourself with one of these scrolls!
