Settle in for the ultimate comfort breakfast. Not only a great high fiber option, but this heart warming porridge is packed with vitamins, minerals, and antioxidants. We don’t like to have our oats overly sweet, so we spiced ours up with fig and cinnamon.
Cinnamon Fig Porridge
ingredients
½ cup oats
1 cup water
¼ cup almond milk
1 tsp cinnamon
Topping
1 fig, cut into four
*you can substitute with ½ an apple, cut into small cubes
1 tsp buckwheat groats
1 tsp coconut flakes
½ tbsp rice malt syrup
*agave and maple syrup work well too
method
1. In a small saucepan add ½ cup of oats, 1 cup of water, ¼ cup of almond milk and 1 tsp of cinnamon.
2. Heat ingredients on a low simmer for 10 minutes, stir occasionally using a wooden spoon.
3. Prepare your topping while simmering ingredients.
4. Once thick and creamy, transfer porridge into a bowl. *if you want it creamier you can add more almond milk here. Add 1 fig, cut into 4 (or your choice of fruit), 1 tsp of buckwheat groats and 1 tsp of coconut flakes to the top of your porridge.
5. Finish by drizzling ½ tbsp of syrup over.
