Baked Tofu Bites

A delightfully crispy, crunchy snack that provides a hit of protein and can be served on their own, or paired with your favourite salad!

ingredients

Tofu Fingers

1 block (500g/17.5oz) firm tofu
2 cups panko breadcrumbs
2 tbsp extra virgin olive oil
1 tsp smoked paprika
1 tsp salt flakes
1 & ½ cups cornflour
1 cup soy milk (or any plant-based milk you have available)
½ lime

Sweet Potato Dip

1 large sweet potato
3 garlic cloves
1 tbsp extra virgin olive oil
1 tsp salt
1 tsp pepper
1 tbsp tahini
1 tsp cumin
1 tsp smoked paprika
½ lime, juiced
1 cup almond milk

Tofu Fingers

1. Preheat the oven to 180 degrees celsius/ 350 degrees fahrenheit and line a baking tray with baking paper.

2. Slice the 500g block of tofu lengthways into 6 slabs. Then, rotate the slabs onto their flat slide and cut lengthways again, creating 12 finger slices.

3. Prepare 3 mixing bowls. In bowl #1 put 1 & ½ cups cornflour. In bowl #2 mix 1 cup soy milk and ½ lime, juiced. In bowl #3 mix 2 cups panko breadcrumbs, 2 tbsp olive oil, 1 tsp smoked paprika and 1 tsp salt flakes.

4. Take 1 tofu finger and dip it into bowl #1 of cornflour, coat in bowl #2 of milk, then back into bowl #1, back into bowl #2, and finish by coating evenly with breadcrumbs from bowl #3. Repeat this process for each tofu finger.

5. Place tofu fingers onto the baking tray and put in the oven for 15 – 20 minutes, making sure you flip them half way. Once they are golden, remove from the oven.

Sweet Potato Dip

1. Preheat the oven to 180 degrees celsius/ 350 degrees fahrenheit and line a baking tray with baking paper.

2. Peel 1 large sweet potato and cut into small bite-sized cubes. Spread out on the baking tray.

3. Peel 3 garlic cloves, and using a knife squash them down until they ‘pop’. Add onto the baking tray with sweet potato.

4. Drizzle over 1 tbsp olive oil and cook in the oven for 20 minutes or until the sweet potato is soft.

5. Allow to cool, then transfer into a high-speed blender or food processor. Add 1 tsp salt, 1 tsp pepper, 1 tbsp tahini, 1 tsp cumin, 1 tsp smoked paprika, ½ lime, juiced and 1 cup almond milk. Blend until there are no lumps and scoop into a dip bowl.

We know tofu is a good source of protein as it contains all the essential amino acids the body needs to function, but it also reduces the hunger hormone known as ghrelin. So, while you’re fuelling your muscles you’re also satisfying any hunger cravings you may be feeling in the middle of the day.
Then, dip into some sweet potato dip and get an extra hit of vitamin A! This helps with our eyesight, a healthy immunity, and efficient heart, lungs and kidney functioning. Dip Dip Hooray!
