Apple Pie Bliss Balls

Bite into these nut-free bliss balls for a quick energy and fibre boost! Just keep them in the fridge to grab and go!

ingredients

1 apple
2 cups rolled oats
1 cup dried apple slices
½ cup (50g/1.8oz) shredded coconut
3 tbsp maple syrup
1 tsp cinnamon
1 tbsp vanilla bean extract
½ tsp nutmeg
4 medjool dates (deseeded)
2 tbsp chia seeds
⅓ cup sultanas

Crumb coating:
⅓ cup rolled oats
⅓ cup shredded coconut

method

1. Start by removing the seeds from 4 medjool dates. Place the dates in a bowl and cover with boiling water for 10 minutes.

2. Meanwhile, grate 1 apple and add into a blender (or food processor) with 2 cups rolled oats, 1 cup dried apple, ½ cup desiccated coconut ,3 tbsp maple syrup, 2 tbsp chia seeds, 1 tsp cinnamon, 1 tsp vanilla bean extract and ½ tsp nutmeg. After 10 minutes, drain the dates and add them as well.

3. Blend for 2-3 minutes until the mixture begins to crumble into a thick paste. *This will be easier achieved in a food processor. In a blender you might have to tamper the mixture down a few times.

4. Spoon mixture out into a large bowl. Add ⅓ cup sultanas. Mix evenly through the mixture.

5. Blend together the crumb coating of ⅓ cup rolled oats and ⅓ cup shredded coconut. Spoon out onto a flat plate.

6. Using your hands, grab approximately 1 heaped tablespoon of apple pie mixture and roll it into a ball, then roll the ball through the crumb coating until it’s evenly covered. Continue until all the mixture is finished! Keep refrigerated.
